Milky ice cream

Required foods:

  • 2,5 glasses of milk
  • A glass of sugar
  • 4 eggs
  • Vanilla

Preparation procedure:

After adding sugar to yolk, mix it firmly and add vanilla to it. Then add this mixture into hot milk and mix in the pot with wooden spoon. After bubbles were out, Mixture in the pot is taken away the fire and cooled by filtering from sieve and some layered- gauze. Chilled mass is gathered in ice cream containers, put into the fridge and splashed some finely chopped walnuts on it.

Milky rice

Ingredients:

  • 1 kg rice
  • 2 lt AzerSud milk
  • Salt
  • Saffron
  • 11 gr seedless raisins
  • 100 gr date
  • 350 gr butter
  • Honey, cream -per taste

Preparation procedure:

Milky rice is cooked only with milk, not meat.

Clean rice and if it has many seeds, filter from colander. Flush the whole rice in hot water. Take 2 litres of milk for some rice. After boiling of milk, add rice into it, mix and add some salt. Add saffron until it gets yellow. Again mix and add flushed seedless raisins, date, sugar-per taste and mix carefully. After softening of the rice, put on the stove. Melt butter in another pot, put lavash in the bottom, pour baked rice on lavash, grease it, brew and serve in big dishes. Milky rice is usually eaten with honey and cream.

Milky sweets with chocolate

Ingredients:

  • 1 packet of butter
  • 4 cups of flour
  • 2 glasses of sugar
  • 2 lt milk
  • 1 packet of vanilla

Preparation procedure:

Add butter and flour into a pot and roast for 3-4 minutes until it loses its smell. Mix it after adding milk and sugar. If it bakes, add vanilla and continue shaking for 1o minutes. Soak a big plate with cold water and pour milky sweets into it.  Then, add chocolate sauce, which has been prepared individually.

Preparation of chocolate sauce:

Pour 2 glasses of milk, a glass of water, 2 full tablespoons of flour, 3 tablespoons of cocoa, a glass and half sugar into the pot.  Cook it in the fireplace until it clots. When it begins to boil, take it out and pour it on milky sweeties. You can decorate it according to your taste by using nuts, walnuts, Indian nuts, etc.

Evaporated milky cake

Ingredients

  • 1 packet of milk ( 400 gr)
  • 4 eggs
  • A glass of flour (150 gr)
  • 1 packet of baking powder
  • 50 gr melted butter ( a tablespoon of butter in order to grease cake plate)

Preparation procedure:

Grease cake mold with a tablespoon of butter. ( if you want, you can splash a little flour). Mix full ingredients ( milk, egg, flour, baking powder and melted butter) well. Cook in the stove for 40 minutes.  Splash powdered sugar on it or you can add fruit sauce or fresh fruit on it.

Milky vegetable dish

Ingredients:

  • Half cauliflower
  • 4 or 5 potatoes
  • 1 small canned sweet corn
  • 5 or 6 carrots
  • Milk
  • Salt, pepper

Preparation procedure:

Boil potatoes in the water, after they get cooler peel them, chop them finely by dividing into 4 pieces. Wash cauliflower, chop carrots as you want after peeling and grease oven tray. First of all, put potatoes into it and add others on them. After each layer, splash salt and pepper. After finishing it, pour a little milk over them. Put it into the oven in low degree. After it is cooked, chip cheese over it.

Milky bread

Ingredients:

For 2 bread:

 

  • 1 packet ( 2 + ¼ teaspoon) dried yeast powder
  • 2 glasses of warm water
  • 6glasses and half flour
  • 1 + ¾ glass of sugar
  • A pinch of salt
  • 1 teaspoon of yellow ginger
  • 1 egg
  • 200 gr butter- melt and cool
  • 1 egg, for cover
  • 1 teaspoon of opium poppy

How to cook

 Mix a glass of milk with yeast in a plate and put aside for 5 minutes. Ina big plate, add flour, sugar , salt and yellow ginger together and mix it.  In the middle of this mixture, add a glass of milk, with yeast, egg and butter and make pastry. Initially, pastry will be sticky, but don’t worry. While you are making pastry, it will lose its stickiness. Pastry mustn’t be very stiff and sticky.

Put pastry to the plate and cover it with towel and put aside. During about 2 hours, cover it with tracing  paper and grease. Then divide it into 2 parts and roll the paste into balls, flatten them until being 22 cm. Its width must be 1.2 cm.  Place bread in  tracing  papers. Cover them with tea towel and put aside for an hour in order to rise. Heat the stove  till 190C.  Mix egg with fork and spread on the bread. Decorate with fork as you see in the picture, then sow opium poppy.

Cook bread in the middle of the stove for 30-35 minutes or till they get red. If two parts of your stove is not appropriate for stove’s width, then put the first one in upper section and another in bottom section for 15 minutes. Continue with changing their places. Cut bread only after cooling completely.

Nut pudding

Inggredients:

  • 1. Add cold milk, sugar, starch and rice flour, then mix
  • 2. Place in middle temperature stove, mix regularly
  • 3. Add nut and cut biscuits before taking from the stove
  • 4. Fill until bowl gets half
  • 5. For sauce: water, sugar, cacao and flour in a small stove. Cook in middle temperature until it gets dark.
  • 6. Add and mix butter and vanilla before taking from stove
  • 7. Sow nuts over pudding
  • 8. Place in the fridge until it gets cooler and it can be served after 2 hours.

Note: You may add chocolate to cacao sauce.

Honey cake

  • Step 1- Prepare cream

Note: Cream may be prepared a week before and kept in the fridge

For cream:

  • 2 jars of hardened Azer Sud milk ( after cooking, you will use half  jar)
  • 300 gr butter

Place jars in the boiler. Fill the boiler with water completely. Let them cook in 2 hours. While water diminishes, add hot water.  After 2 hours, put the boiler aside. Let jars be in the water for 5 minutes. Then empty the water, but don’t open jars, in another case they will blow up! Let jars cool until they are in room temperature, then open.

In a plate, mix butter with mixer. Then, add a jar and half of cooled hardened milk to the butter and mix more.  Don’t mix more, or cream will spoil. Place cream in the fridge and pass to prepare pastry.

  • Step 2- Prepare pastry

Necessary ingredients for pastry:

  • 3 eggs
  • 1 glass of sugar
  • 3 tablespoon of honey
  • 100 gr butter
  • 1 teaspoon of soda
  • 3-3.5 glasses of flour

Place egg and sugar in heat-resistant bowl or boiler, then mix. Add honey and butter to this mixture. In another boiler, boil water. Place pot with egg or boiler on boiler, in which water boils. Water shouldn’t hit upper plates. Let water continue to boil, you mix products of upper pot without stop in order to melt them for about 5 minutes.

Then, while mixing, add soda to this mixture. Mixture will get white and swell. Mix for about half a minute, put the pot aside from heat. While adding 3 glasses of flour gradually and little by little, mix it. If pastry is a bit sticky, it is normal. After pastry gets cooler, it becomes stiff. Thus, don’t add much flour.  Or if pastry is so sticky after getting cool, then add additional flour. Divide pastry into 5 parts.

  • Step 3- Cook biscuit layers

Heat the stove in 190 C. Grease big tracing paper well.

Place one of pastry balls in the middle of layer. Prepare pastry in 28 cm width with your fingers as a circle. If pastry is sticky, immerse them in the flour and spread pastry. Fingers will not stick to pastry. Circle will be thin.  Note: This cake can be prepared in the form of square per taste.

You will need cut biscuit for decorating cover and edges of the cake. In order to do so, you will need to cut edges after cooking.

Cook layers for 4-5 minutes or until their cover gets red. Biscuits will swell a bit. After taking layers from the stove, place spatula under biscuits that, distinguish stove without damage.

 

  • Step 4- Prepare cake

Smear the cream in the middle of layers. Smear cream to the cover and edges of the cake. Sow crumbs on cover and edges of the cake. If your crumbs are little, then mix walnut with those crumbs. In this stage, cake is not ready for eating. Keep the cake in room temperature aside for at least 6 hours in order to soften it.

Cheese pie

Ingredients:

  • Stiff cheese – 150 gr
  • 3 eggs
  • Mayonnaise- 100 ml
  • Sour cream- 100 ml
  • Flour- 4 tablespoons
  • Baking powder- 2 teaspoons
  • Salt, spice, green onion, dill

Preparation procedure: Mix egg, mayonnaise, sour cream, baking powder, salt, pepper with mixer. Add grated cheese, finely chopped dill and onion, then mix well. Pastry is made in the form, prepared before and cooked for 30-40 minutes in 180 C stove. You may prepare with straw if it is ready or not.

Zebra cake

Ingredients:

  • 4 eggs
  • 1 glass of sugar
  • 1 glass of milk
  • 1 glass of vegetable oil
  • 2 glasses of flour
  • 1\3 teaspoon of vanilla
  • 1 teaspoon of soda
  • 2 tablespoons of dark cacao

Preparation procedure:

Mix egg and sugar with mixer.  Add milk and butter and continue mixing. In another plate, mix flour, vanilla, soda with a spoon. Add flour mixture to egg mixture and mix for 10 seconds. It must be neither very stiff nor washy. Divide mixture into 2 parts. Add cacao into one of them, heat in 180 C. Grease the container, pour in 3 tablespoons of white, 3 tablespoons of cacao mixture. Don’t shake the container. Pastry itself will spread. Cook for 40 minutes. Don’t open the stove for the first 20 minutes, or it will not be swollen.
